When I was teaching in and travelling through Morocco a few years ago, Oatmeal in a Jar was my favourite on-the-road breakfast or lunch.
A few years before that trip I discovered that you don’t need to cook the oats to create a perfect and delicious oatmeal. So after some experimentation in my kitchen, Oatmeal in a Jar was born. I took it with me to workshops, on road trips, on aeroplanes, trains and cars.
Funny thing is, this year I can see Overnight Oats popping up on almost every food blog. It’s almost the same as ‘my’ Oatmeal in a jar, yet there is one big difference: time.
I find that for a perfect oatmeal, there’s no need to soak the oats for a full night. Thirty minutes will do just fine. And that makes the Oatmeal in a Jar even easier to travel with: no need to pre-soak, just blend with water while you’re on the road, wait thirty minutes and enjoy.
Here’s a basic recipe, but feel free to experiment, especially with toppings – the possibilities are literally endless.
Oatmeal in a Jar
Ingredients
- 1/3 cup oats
- 2 tbs chia seeds
- Cinnamon, nutmeg, vanilla and/or ginger to taste
- 1 cup water, rice milk, coconut milk or almond milk
- Toppings
Suggested toppings
1 tbs nut butter or coconut oil,
a handful of fresh or dried fruits,
avocado,
cacao nibs…anything you like!
Method
Put the oats, chia seeds and spices in a jar. Shake and take with you wherever you go.
Add the liquid at least thirty minutes before you’d like to eat your oatmeal. Shake, wait and top with whatever toppings you like.
When you’re on the road, you can also add the toppings to the dry mixture and let them soak as well. Raisins, dates, nuts and cacao nibs work very well – add an extra splash of liquid though.
